Carrot Cake

This is my family’s favorite recipe for carrot cake! it is especially delicious with cream cheese frosting. Enjoy!

6 c. grated carrots
1 c. brown sugar
1 c. raisins (optional)
4 eggs
1 1/2 c. white sugar
1 c. vegetable oil
2 t. vanilla
1 c. crushed pineapple, drained (You can save the juice to use in the icing)
3 c. flour
1 1/2 t. baking soda
4 t. cinnamon
Combine carrots and brown sugar. Set aside for 60 minutes; stir in raisins. Beat eggs until light. Beat in white sugar, vegetable oil, and vanilla. Stir in crushed pineapple. Combine flour, baking soda, salt, and cinnamon. Stir just until absorbed. Add carrot mixture. Pour batter into 2 greased 10″ pans. Bake at 3500 for 45-50 minutes.
Let the cakes cool completely. Assemble and ice with cream cheese icing.
